Pulled Chicken & Apple Slaw Burgers

Slow cooking is one of the best ways to preserve the tenderness of chicken breast and lock in flavour. With a hint of spice and sticky sweetness, these pulled chicken burgers are perfectly balanced with a crisp apple slaw for a fresh, satisfying bite.

INGREDIENTS
  • 2 Elgin Valley Farms free range chicken breast fillets
  • 40g BBQ spice rub
  • ½ cup chicken stock
  • 6-8 sprigs fresh thyme
  • 2 cloves garlic, peeled
  • 1 cup BBQ sauce
  • 3 cups green cabbage, shredded
  • 1 medium carrot, grated
  • 1 medium red apple, finely julienned
  • 1 medium green apple, finely julienned
  • 1 spring onion, finely sliced
  • ½ cup mayonnaise
  • 2 tbsp brown sugar
  • 2 tbsp lemon juice
  • 8 small to medium Brioche burger buns
METHOD
Slow Cooker
  1. Place chicken breasts in a large glass or ceramic dish and sprinkle over the  BBQ spice rub and massage all over the chicken. Cover with cling film and marinate for minimum 2 hours or overnight.
  2. Place chicken breasts in slow cooker and add stock, thyme and garlic then cook for 6 hours on low.
  3. Remove thyme stems and garlic cloves and using two forks, shred the chicken in its juices and add BBQ sauce before leaving to cool slightly.
  4. In a large bowl, combine the shredded cabbage, carrot, apples and spring onion. In a small bowl, combine the mayonnaise, brown sugar and lemon juice and pour over the slaw ingredients. Mix thoroughly.
  5. Serve pulled chicken on burger buns and top with the fresh apple slaw and extra BBQ sauce to serve

Options: Add a red chilli cut in half to the slow cooker with the chicken and chopped jalapeños to the slaw for a fiery alternative!
